About this calculator
Recipes written for one type of yeast can be converted to another using standard baking-industry substitution ratios: by weight, fresh (cake) yeast is roughly 3 times the amount of active dry yeast called for, while instant yeast — being more concentrated and needing no proofing — is used at about 75% of the active dry amount, since its finer granules and different processing let it hydrate and act faster with less yeast needed for the same rise.
These ratios exist because the three products aren't just different forms of the same organism in name only — fresh yeast is a moist, perishable cake with a shorter shelf life, active dry yeast is dried into coarse granules that traditionally need proofing in warm water first, and instant yeast is dried into finer particles that can be mixed straight into flour — so a 1:1 substitution by weight would throw off both rise time and final flavor.
