About this calculator
Bulk fermentation is the stage after mixing when bread dough rests as a whole mass and wild yeast and bacteria produce the CO2 and flavor compounds that give the finished loaf its rise and character. Fermentation speed is highly sensitive to temperature, following roughly a Q10≈2 rule — for every 10°C rise, the rate of fermentation approximately doubles.
This calculator scales your recipe's base bulk time — usually specified at a reference temperature like 24°C — to whatever temperature your dough actually is, since a kitchen that's warmer or cooler than the recipe assumed will finish bulk fermentation noticeably faster or slower.
