About this calculator

Sizing a home canning batch starts with dividing the total volume of food you’re processing by the capacity of the jars you plan to use, which gives the number of jars needed — but the jars can’t be filled to the brim, because canning recipes call for a specific headspace, an empty gap left at the top (commonly around 1/4 inch for jams and jellies up to 1 inch for low-acid foods pressure-canned, per USDA and Ball guidelines) that allows food to expand during processing and lets a proper vacuum seal form as the jar cools.

Skipping or misjudging headspace is one of the most common home-canning mistakes: too little headspace can push food out and prevent the lid from sealing, while too much headspace can leave excess air that affects the seal and shortens shelf life.
