About this calculator
Headspace — the empty gap left between the top of the food and the jar lid — is not wasted space in home canning; it’s a safety requirement, because that air pocket is what gets driven out as steam during processing to form the vacuum seal that keeps the jar shelf-stable. The USDA’s canning guidelines specify exact headspace by food type: roughly ¼ inch for jams and jellies, ½ inch for most fruits and pickles, and a full inch for low-acid foods like vegetables and meats that need pressure canning, because these denser, less-acidic foods expand more during processing.
Home canners use headspace math to know exactly how much food to pack into each jar — too little headspace and food can boil over during processing, breaking the seal; too much and there isn’t enough vacuum to seal properly.
