About this calculator

Headspace — the empty gap left between the top of the food and the jar lid — is not wasted space in home canning; it’s a safety requirement, because that air pocket is what gets driven out as steam during processing to form the vacuum seal that keeps the jar shelf-stable. The USDA’s canning guidelines specify exact headspace by food type: roughly ¼ inch for jams and jellies, ½ inch for most fruits and pickles, and a full inch for low-acid foods like vegetables and meats that need pressure canning, because these denser, less-acidic foods expand more during processing.

Home canners use headspace math to know exactly how much food to pack into each jar — too little headspace and food can boil over during processing, breaking the seal; too much and there isn’t enough vacuum to seal properly. Getting it right for a jar’s specific inner diameter, not just its labeled capacity, is what determines the true usable fill volume.

This calculator takes your jar’s capacity, inner diameter and the headspace your recipe requires, and returns the exact fill volume for that jar, so you can pack it correctly every time.
