About this calculator
This converter translates an oven temperature between Celsius, Fahrenheit, and the UK gas mark scale, a numbered scale (mark 1 through 9, roughly 140°C/275°F to 240°C/475°F) that British gas ovens have used since the early 20th century instead of a direct temperature dial. It also accounts for the common fan-oven adjustment — recipes written for a conventional oven usually need the fan (convection) setting lowered by about 20°C (or roughly one gas mark), since fan-forced air cooks food faster at the same nominal temperature.
Home cooks use it when following a recipe written in a different country's units, bakers use it to convert precise temperatures for delicate items like pastry and bread, cookbook publishers and recipe developers use it to localize recipes for multiple markets, and anyone using an older British gas cooker uses it to translate a modern recipe's Celsius or Fahrenheit figure into a gas mark setting.
