This converter translates an oven temperature between Celsius, Fahrenheit, and the UK gas mark scale, a numbered scale (mark 1 through 9, roughly 140°C/275°F to 240°C/475°F) that British gas ovens have used since the early 20th century instead of a direct temperature dial. It also accounts for the common fan-oven adjustment — recipes written for a conventional oven usually need the fan (convection) setting lowered by about 20°C (or roughly one gas mark), since fan-forced air cooks food faster at the same nominal temperature.
