About this calculator

A frozen turkey must thaw slowly enough that its surface never sits in the food-safety “danger zone” (above 4°C/40°F) long enough for bacteria to multiply, which is why the USDA’s refrigerator method calls for roughly 24 hours of thawing time for every 4–5 pounds (about 2 kg) of turkey — a 20-pound bird needs a full 4–5 days in the fridge. The faster alternative, cold water thawing, needs the turkey fully submerged (still in its packaging) in water changed every 30 minutes, at a rate of roughly 30 minutes per pound.

Home cooks planning a holiday meal use this timing to work backward from the meal itself — miscounting thaw days is one of the most common reasons a turkey isn’t ready (or, worse, is thawed unsafely on a countertop) on the day it needs to go in the oven. Refrigerator thawing is the recommended method precisely because it never lets the bird warm past a safe temperature, while cold water thawing is faster but requires active attention to keep the water cold and circulating.
