About this calculator

USDA guidance puts refrigerator thawing at roughly 24 hours for every 5 lb (2.3 kg) of meat, since the fridge's near-40°F (4°C) environment thaws slowly and safely from the outside in. Cold-water thawing is much faster — about 30 minutes per pound — but only works if the meat stays in a sealed bag with the water changed every 30 minutes to keep it cold.

Home cooks use it to work backward from dinnertime: a 5 lb roast needs a full day in the fridge, while the same roast could be ready in under three hours using the cold-water method — useful when you forgot to move dinner out of the freezer the night before, since the USDA specifically warns against thawing meat on the counter at room temperature.
